#ZeroWasteChallenge - Day 22 Pumpkin Soup

On day 22 I was feeling a liitlle better, and i decided to make a pumpkin soup from the half butternut squash I had in the fridge (unpeeled), with my chicken stock made from chicken bones, leftover rice, leftover roast veg (potato, beetroot and onion) , a fresh onion, 2 celery sticks and a stalk of parsley that had gone to seed in the garden.


It all went in the pressure cooker for 15 mins, and then I blended it and added a dash of cream from a half used pot in the fridge. I also garnished it with some fried pumpkin seeds.


I have to say I felt much better for eating it.


The parsley left a few stringy bits in the soup, but they were easily picked out.
