Day 24 - Grapefruit Marmalade!

On day 24 I used the peels from 3 grapefruit that i had shredded and frozen as I ate them, to make grapefruit marmalade.



It's very simple, you just cover the peels with water and boil or pressure cook to soften them ( I pressure cook for 15 minutes. You then weigh the peels and water and add the same weight of sugar, heat til the sugar dissolves, then boil until it wrinkles on a cold plate (or reaches 105C). Pour into sterilised jars. I usually add a couple of teaspoons of citric acid to make up for the lack of juice and to add a bit of a tang,
